Skillet Sweet Corn Casserole
Ingredients:
● 1 (8.5 oz) box jiffy cornbread mix
● 1 (14.5 oz) can sweet corn (drained)
● 1 (14.5 oz) can cream corn
● 1 cup sour cream
● ½ cup vegetable oil
● ¾ cup granulated sugar
● 3 eggs (lightly beaten)
● ½ tsp. salt
● ½ tsp. pepper
Instructions:
1. Preheat the oven to 350 degrees fahrenheit.
2. In a large mixing bowl, whisk together the cornbread mix, sugar, salt, and pepper.
3. Add the corn, cream corn, sour cream, oil, and eggs to the mixing bowl. Mix together until all of the ingredients are well combined.
4. Pour the mixture in a 12 inch cast iron skillet.
5. Bake in the oven uncovered for 1 hour or until golden brown.
6. Allow the casserole to rest for at least 5 minutes before serving. Enjoy!
