Ingredients:
For the meat sauce
● Olive oil
● 1 lb. ground beef (italian sausage can be substituted)
● Salt & Pepper (for seasoning the meat)
● 1 finely chopped small yellow onion
● 1 tbsp. minced garlic
● 3 cups pasta sauce (a 25 oz. jar pasta sauce will work)
● ¼ tsp oregano
● ¼ tsp thyme
● ¼ tsp basil
For the white mixture
● ¾ cup ricotta cheese
● ½ cup sour cream
● 1 large egg
● 2 cups baby spinach, chopped
● 1 cup grated parmesan
● 1 cup shredded mozzarella
● 1 tbsp. italian seasoning
● ½ tsp garlic powder
Other
● 8 lasagna noodles
● 1 cup shredded mozzarella (for topping)
● 1 tbsp. italian seasoning (for topping)
Instructions:
1. Make lasagna noodles according to package instructions.
2. Drain noodles, dry them, cut into thirds, then set aside.
3. Add 2-3 tbsp. olive oil to a 12 in. preheated cast iron skillet over medium heat, then add the onion, and cook until softened.
4. Add minced garlic to the onions, and cook for about one minute.
5. Add the ground beef, and cook until browned.
6. Drain the excess grease from the beef, then add the pasta sauce and herbs.
7. Allow the meat sauce to simmer for 5-7 minutes.
8. While the meat sauce is simmering, make the white mixture by combining all of the ingredients listed above in a large bowl.
9. Remove the meat sauce from the cast iron skillet into a large bowl.
10. Preheat the oven to 400 degrees fahrenheit.
11. Layer the lasagna in the skillet: ⅓ meat sauce, ½ noodles, ½ white mixture, ⅓ meat sauce, ½ noodles, ½ white mixture, ⅓ meat sauce, 1 cup of shredded mozzarella, and Italian seasoning.
12. Bake covered for 30-35 minutes, then uncovered for 5-10 minutes.
13. Remove lasagna from the oven and allow it to rest for 5 minutes before serving.
