Original Cast Iron Skillet Cornbread
Ingredients:
● 1 ½ cups cornmeal
● 1 cup flour
● ⅓ cup sugar
● 4 teaspoons baking powder
● 1 teaspoon salt
● 2 cups buttermilk
● 1 egg
● 6 tablespoons melted butter
Instructions:
1. Turn on the oven to preheat to 425 degrees. Put a 10 inch cast iron skillet in the oven to preheat as well.
2. Mix together cornmeal, flour, sugar, baking powder, and salt.
3. Mix together buttermilk, egg, and 3 tablespoons of melted butter.
4. Combine wet and dry ingredients well.
5. When the oven is preheated, remove the hot skillet from the oven.
6. Add the remaining 3 tablespoons of butter to the hot pan.
7. When the butter is melted in the pan, pour the cornbread mixture in the skillet.
8. Bake at 425 degrees for 25-30 minutes, or until golden brown.
***Optional: Try topping with a pad of butter and drizzled honey!
