One Pot Taco Soup

Ingredients:

● 2 tbsp. olive oil

● 2 lbs. ground beef

● 1 chopped yellow onion

● 1 tbsp. minced garlic

● 2 tbsp. tomato paste

● 2 (10 oz) cans petite diced tomatoes(undrained)

● 1 (4 oz) can green chilies

● 1 (15 oz) can drained black beans

● 1 (15 oz) can of drained kidney beans

● 1 (15 oz) can drained whole kernel corn

● 5-6 cups low sodium beef broth (depending on how “soupy” you like it)

● 1 tbsp. chili powder

● 2 tsp. paprika

● 1 tsp. ground cumin

● 1 tsp. onion powder

● 1 tsp. garlic powder

● 1 tsp. oregano

● ½ tsp. salt

● ½ tsp. black pepper

● ¼ tsp. cayenne pepper

● 1 dry ranch packet

Optional: tortilla chips, shredded cheese, sour cream, avocado, and cilantro for topping!


Instructions:

1. Preheat your cast iron dutch oven over medium heat for 3-5 minutes.

2. Add the olive oil, onions, and ground beef to the dutch oven. Cook until the ground beef is browned, then drain if necessary.

3. Add minced garlic, tomato paste, and all of the spices (excluding dry ranch packet) to the beef, then stir until well combined.

4. Add beef broth and mix until smooth.

5. Add tomatoes, chilies, beans, corn, and ranch packet, then mix.

6. Reduce heat, cover, and simmer for at least 30 minutes.

7. Add your favorite toppings and enjoy!
