One Pot Taco Mac

Ingredients:

● 2 tablespoons olive oil

● 1-pound lean ground beef

● Salt and Pepper (to season the beef)

● 1 tablespoon butter

● 1 medium yellow onion (chopped small)

● 1 tablespoon minced garlic

● 1 tablespoon worcestershire sauce

● 1 tablespoon chili powder

● 1 teaspoon salt

● 1 teaspoon black pepper

● 1 ½ teaspoon ground cumin

● ½ teaspoon paprika

● ¼ teaspoon oregano

● ¼ teaspoon red pepper flakes

● ¼ teaspoon onion powder

● ¼ teaspoon garlic powder

● 1 (10 oz.) can petite diced tomatoes with green chilies (drained)

● 2 cups beef broth

● 1 cup whole milk

● 8 ounces shell pasta

● 5 ounces velveeta cheese

● 2 cups shredded cheddar cheese (I use sharp cheddar and monterey jack)


Instructions:

1. Preheat a dutch oven over medium heat, then add the cooking oil.

2. Season the meat with salt and pepper and cook until browned.

3. Melt the butter in with the ground beef, then add the onions.

4. Cook the onions for 3-5 minutes, then add the minced garlic.

5. Cook the garlic for about a minute, or until fragrant.

6. Add the worcestershire sauce, all of the spices, and tomatoes.

7. Mix well, then add the broth and milk. Bring the contents of the dutch oven to a gentle boil.

8. Add the pasta, and cook until the pasta is done. Make sure to stir occasionally so that nothing sticks to the bottom.

9. When the pasta is cooked through and most of the liquid is absorbed, add all of the cheese.

10. Reduce the heat to low, and stir until all of the cheese is melted.

11. Turn off the heat, serve, and enjoy!
