Chocolate Chip Zucchini Bread


Ingredients:

● 2 cups shredded zucchini

● 1 ⅔ cups all-purpose flour

● 1 teaspoon baking soda

● ¼ teaspoon baking powder

● ¼ teaspoon salt

● 1 teaspoon ground cinnamon

● ¼ teaspoon nutmeg

● ½ cup canola oil

● 1 cup sugar

● 2 eggs

● ¼ cup sour cream

● ½ cup semi-sweet chocolate chips(divided)


Instructions:

1. Begin by washing the zucchini, then shredding two cups of zucchini. (When shredding the zucchini, most of the water will drain out, but it does not hurt to gently squeeze the shredded zucchini over the sink to remove excess water).

2. Preheat the oven to 350 degrees.

3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.

4. In a separate large mixing bowl, whisk together the canola oil and sugar.

5. Whisk the two eggs and sour cream in with the oil sugar mixture.

6. Fold in the shredded zucchini in with the oil, sugar, sour cream, and egg mixture.

7. Combine the wet ingredients to the dry ingredients, add half of the chocolate chips, then mix until well combined.

8. Lightly oil a 8.5” by 4.5” bread pan (I use cast iron), then dump your zucchini bread mixture inside.

9. Sprinkle the remaining chocolate chips on top, then bake for approximately 1 hour.

10. Allow bread to cool for 10-15 minutes before serving!
