Cast Iron Skillet Sweet Glazed Meatloaf

Cast Iron Skillet Sweet Glazed Meatloaf

Ingredients:

● 2 lbs. lean ground beef

● 4 eggs

● ½ cup milk

● 2 sleeves (60) Ritz crackers

● 1 yellow onion

● 1 cup shredded cheddar cheese

● 1.5 teaspoons salt

● 1 teaspoon black pepper

● 1 teaspoon minced garlic

● Few dashes of worcestershire sauce

● ⅓ cup brown sugar

● ½ cup ketchup

● 1 tablespoon yellow mustard



Instructions:

1. Finely chop and sauté yellow onion in olive oil. Set aside to cool.

2. Whisk together 4 eggs and ½ cup of milk.

3. Break Ritz crackers into fine crumbles by using a food processor or kitchen utensil.

4. Preheat the oven to 350 degrees.

5. Mix together beef, seasonings, garlic, w sauce, egg/milk mixture, Ritz crackers, sautéed onions, and cheese.

6. Spread meatloaf mixture into 10 in. cast iron skillet evenly.

7. Bake meatloaf for 30 minutes uncovered.

8. Make glaze by mixing together the brown sugar, ketchup, and yellow mustard.

9. After the meatloaf has baked for 30 minutes, remove from the oven, and spread the glaze evenly over the entire meatloaf.

10. Put back in the oven for another 30 minutes uncovered.

11. Top with fresh chopped or dried parsley. (for presentation)

12. Let the meatloaf rest 5 minutes before slicing and serving.
