Cast Iron Skillet Hash Brown Casserole

Ingredients:

● 1 pound shredded hash browns

● ½ chopped and sautéed yellow onion

● 1 ½ cups shredded colby cheese

● ½ stick melted butter

● ½ can cream of chicken soup

● 1 cups sour cream

● 1 teaspoons salt

● 1 teaspoons black pepper


Instructions:

1. Thaw frozen hash browns or shred fresh hash browns.

2. Chop and sauté yellow onion. Let cool.

3. Preheat the oven to 350 degrees.

4. Mix together all ingredients, except ½ cup of the colby cheese, very well.

5. Add mixture to a greased 10 inch cast iron skillet.

6. Top with remaining ½ cup of colby cheese.

7. Bake for 40 minutes.

8. Optional: Broil 2-3 minutes for golden brown top.
