Ingredients:
● 1 lb. raw, peeled, deveined, and detailed large shrimp
● Cajun seasoning for the shrimp (I use Slap Ya Mama)
● 1 lb. linguine noodles
● 2 tbsp unsalted butter
● 1 tbsp minced garlic
● 2 tbsp all-purpose flour
● ¾ cup heavy cream
● 1 cup reserved pasta water
● ½ tsp salt
● ½ tsp black pepper
● 1 tsp dried parsley (fresh works well too, will need extra for topping/serving)
● ½ tsp Cajun seasoning (Slap Ya Mama)
● 1 cup grated parmesan cheese (will need extra for topping/serving)
● ½ lemon juice
● Olive oil
Instructions:
1. Season the shrimp with the Cajun seasoning of your choice and allow to sit for 30 minutes prior to cooking. This helps the flavor to absorb into the shrimp.
2. Cook linguine noodles according to the package instructions.
3. When the linguine is done cooking, drain the noodles, but be sure to reserve 1 cup of the pasta water for the sauce. (I toss my cooked noodles in a little olive oil to prevent them from sticking together)
4. Preheat a 12 inch cast iron skillet over medium heat for approximately 5 minutes.
5. Add approximately 2 tablespoons of olive oil to the hot skillet.
6. Spread the shrimp out evenly in the skillet and allow the shrimp to cook for two minutes on each side.
7. Reduce the heat to low and remove the seared shrimp from the skillet.
8. Add butter to the skillet and allow to completely melt. Stir frequently to mix the butter and the juices from the skillet.
9. Add minced garlic, and cook until fragrant (approximately 30 seconds to a minute).
10. Whisk in the all-purpose flour until well combined, then cook for 1-2 minutes.
11. Whisk in the heavy cream, mix continuously, and allow to cook for 1-2 minutes.
12. Whisk in reserved pasta water, mix continuously, and allow to cook for 1-2 min.
13. Add salt, pepper, dried or fresh parsley, Cajun seasoning, grated parmesan cheese, and lemon juice then mix well.
14. Bring sauce to a light simmer (usually takes 3-5 minutes).
15. Add the cooked linguine noodles back to the skillet and fold in with the sauce.
16. Top with the seared shrimp, extra grated parmesan cheese, and more parsley.
