Ingredients:
● 4 cups all-purpose flour
● 4 tsp sugar
● 2 tsp salt
● 1 tbsp baking powder
● 1 tsp baking soda
● 2 sticks frozen unsalted butter
● 3 tbsp melted unsalted butter
● 2 cups buttermilk
Instructions:
1. Place two sticks of unsalted butter in the freezer for at least thirty minutes to an hour.
2. Preheat the oven to 450 degrees.
3. Whisk together the flour, sugar, baking powder, and baking soda.
4. Coat both sticks of the frozen butter in the flour mixture.
5. Grate both sticks of the frozen butter into the flour mixture, then gently mix.
6. Pour the buttermilk into the flour butter mixture, then mix.
7. Clean and sprinkle flour to a flat cooking surface, then lay your biscuit dough down on the surface.
8. Flour your hands, then begin to knead the biscuit dough. When kneading, make a trifold with the dough three times.
9. Flatten out the dough to your desired biscuit thickness. I like to make mine ¾ inch to 1 inch (prior to baking).
10. Use a cup or biscuit cutter to cut the biscuits from the dough. It is helpful to flour the cutter before using it. There should be 10-12 biscuits depending on the size made.
11. Melt 3 tbsp of butter and lightly brush the bottom and sides of your 12 inch cast iron skillet.
12. Place the biscuits inside of the skillet. It is okay that they touch each other.
13. Brush the tops of the biscuits with more melted butter, then place in the oven.
14. Bake for 18-22 minutes, or until golden brown.
15. Remove from the oven and brush with butter once more. Enjoy!
