Cast Iron Skillet Breakfast Casserole
Ingredients:
● 1-pound ground breakfast sausage
● 1 yellow onion
● 4 cups southern style hash browns
● 3 tablespoons butter
● 8 eggs
● ¼ cup milk
● 1 ½ cups shredded colby cheese
● Salt
● Pepper
● Olive oil (or oil of choice)
Instructions:
1. In a 12 inch cast iron skillet, begin browning the breakfast sausage.
2. Season the sausage with salt and pepper.
3. Finely chop your onion, and add it to the sausage.
4. When the sausage is completely cooked, remove from the skillet, drain, and set aside.
5. In the same skillet heat 3 tablespoons of butter and some oil over medium heat.
6. Add the southern style hash browns to the skillet.
7. Season the hash browns with salt and pepper.
8. While the hash browns are cooking, whisk together your eggs, milk, ½ cup of the shredded cheese, salt, and pepper.
9. Preheat your oven to 350 degrees.
10. When the hash browns are browned and crisp, turn off the heat.
11. Spread the hash browns out evenly in the pan.
12. Pour the egg mixture evenly over the hash browns. (Don’t mix)
13. Spread the cooked sausage evenly over the hash browns and eggs.
14. Top with the remaining cup of shredded cheese.
15. Transfer the skillet to the oven and cook for 15 minutes.
16. Let rest a couple of minutes, dab off any excess grease with a paper towel, and serve!
***Optional: This casserole is delicious topped with salsa or white gravy!
